Carcavelos is a small wine region east of Lisbon. Making Carcavelos is akin to the French dessert wine Pineau des Charentes, but has a different approach to fortification and sweetening. Some of the fresh grape must is set aside and has its ferment halted by adding brandy, called vinho abafado meaning ‘smothered wine.’ The rest of the wine is allowed to ferment to dryness before the vinho abafado is blended in. Together these are aged in barrels for years to develop oxidative flavors.
