A darker rosado, more akin to Tavel than Provence. Wild, explosive aromas of violets, cherries and strawberries jump from the glass, backed up by slightly grippy tannins and spice. Like Tavel, this baby can stand up to some hefty foods – pork or chicken, rubbed with fresh herbs and grilled would be delicious. But, let’s branch out this weekend and put together a classic dish – Fideuá – kind of like Paella with noodles instead of rice.
