Matured in 1st fill barrels and refill hogsheads. Named “SRV5” because the spirit rested in Vat 5 on Station Road. On the nose has galia melon, lemongrass, apricot, cucumber, waxed lemons, green peppercorns & capers in brine, green apples, lime cordial, grapefruit bitters, green peppers, coastal peat and beach bonfires. The palate has greengage, cantaloupe melon, banana smoothie, lemon oil, grapefruit juice, capers, lemongrass, thyme, 1st press olive oil, candlewax, and gentle smoke. The finish has lemon balm, thyme, camphor, earthy peat, and a gentle smoke with a long coating of waxiness.
